Tasting Notes: Light blossom pink in colour, with delicately scented strawberries and cream on the nose. Perfectly poised off dry sweetness to round out the palate, structure provided by ripe phenolics from gentle handling and pressing. Smooth finish and enticing length.

Wine Making: Lightly pressed to preserve maximum fruit character, the juice was cold settled for 48 hours. Clear juice was then racked to tank and fermented with selected yeast strains until the desired acid/sugar balance was achieved. The ferment was arrested with cooling and the wine rested on gross lees for one month. The wine was then racked onto fine lees. The grapes were harvest on the 30 March 2009.

Food Match: Simply a glass of Rosé and fresh salmon sashimi – heaven!
